Winston Matthews and his brother Miles, Head Chef of Red bring a wealth of experience to their roles. Winston was trained at Westminster College attaining best overall Student. He has held senior positions at the Ritz and Dorchester Hotel. In 1992 he opened Le Palais du Jardin in Covent Garden as Executive Head Chef. His many awards and achievements include The William Heptinstall Scholarship 1986, semi finalist Roux Scholarship 1990, 1991, and 1992, semi finalist Young Chef of the year 1990, and Finalist Acadamie Junior chef of the year 1990.

In 1997 Le Palais du Jardin won best Brasserie Restaurant in the 1st Carlton TV Awards. Miles was Head Chef of the Tasis American School and he joined Winston at Le Palais du Jardin as Head Chef for 4 years. Winston opened Red in the summer of 2001.

"The very essence of what I wanted Red to be has been the culmination of my work and experience over the last 15 years. As you have probably guessed I have a particular enthusiasm for fresh fish and my menu contains a celebration of the marvellous seafood from our coast. My choice of wine aims to compliment all of these dishes but I am always happy to discuss and encourage any suggestions.
